Baking Soda vs. Baking Powder: The Chemistry of the Rise
They look identical and sit side by side, but they are not interchangeable. Understanding the chemistry tells you which to use, how much, and why substitutions fail.
Two white powders, near-identical in appearance, sitting next to each other in every baking aisle — and swapping one for the other is one of the most common reasons a cake comes out flat, bitter, or metallic. Baking soda and baking powder both create lift, but through different chemistry, and knowing the difference makes leavening predictable.
Baking soda: one reactive ingredient
Baking soda is pure sodium bicarbonate, a base. On its own it does nothing useful in a batter. It releases carbon dioxide — the gas that makes baked goods rise — only when it meets an acid and moisture. Common acids in recipes include buttermilk, yogurt, lemon juice, vinegar, brown sugar, honey, cocoa (natural), and molasses.
Because it is a strong base, baking soda has two consequences beyond lift:
- It needs a matched acid. Too much soda, or not enough acid to neutralize it, leaves a soapy, metallic, bitter taste and a coarse crumb.

Baking powder: a complete kit
Baking powder is baking soda plus a dry acid (such as cream of tartar or sodium aluminum sulfate) plus a starch to keep them apart until use. It is a self-contained leavening system: it already has both halves, so it works in recipes that contain no acidic ingredient of their own.
Most modern baking powder is double-acting: it releases a little gas when it gets wet, and a second, larger burst when it is heated in the oven. That second stage is what gives a reliable, even rise and is why you should get batter into a hot oven reasonably promptly.
When to use which
- Use baking soda when the recipe already contains acid (buttermilk pancakes, chocolate cake with natural cocoa, gingerbread with molasses). The soda is there to neutralize that acid and to leaven.
- Use baking powder when there is no significant acid to react with (plain vanilla cake, biscuits made with milk).
- Some recipes use both — soda to handle the recipe's acidity and control browning, plus powder for extra, reliable lift.
Why substitutions go wrong
They are not a 1:1 swap. Baking powder is roughly three to four times weaker than baking soda by volume because it is mostly filler and acid. Replacing powder with straight soda floods the batter with base and no acid to balance it — hello, metallic taste. Replacing soda with powder often leaves too little lift and fails to neutralize the recipe's acid.
