Tips for Scaling Recipes
While mathematical scaling multiplies weights symmetrically, physical baking results may vary. Keep these rules in mind when scaling:
- Cooking Times: If you scale up a recipe but use the same pan, the mixture will be thicker and require more baking time. E.g., doubling a browser recipe usually requires baking in a larger pan rather than extending the time in a standard pan.
- Leavening Agents: Large batches behave differently. Over-measuring baking powder or soda by a factor of 3x or 4x can sometimes cause cakes to collapse. A general rule is usually 1 tsp baking powder per 1 cup of flour.
- Spices & Salt: Spices do not always scale linearly. Often, you may need slightly less than double the amount of strong spices like cayenne or salt when doubling a recipe. Taste and adjust as needed!
