Emulsions Explained: Why Some Sauces Break and Others Don't

Mayonnaise, vinaigrette, hollandaise, and pan sauces are all the same trick: forcing oil and water to coexist. Learn the science and your sauces stop splitting.

Oil and water do not mix — everyone knows the saying, and yet mayonnaise, hollandaise, vinaigrette, and a glossy pan sauce all depend on making them do exactly that. The trick is called an emulsion, and once you understand it, "my sauce split" stops being a mystery and becomes a solvable problem.

What an emulsion is

An emulsion is a mixture of two liquids that normally repel each other — typically fat and water — with one broken into microscopic droplets suspended in the other. Shake oil and vinegar together and you force tiny oil droplets into the water, but they quickly find each other again and separate. To keep them apart, you need two things: mechanical force to break the droplets up, and an emulsifier to keep them from recombining.

The role of the emulsifier

An emulsifier is a molecule with a split personality: one end loves water, the other loves fat. It parks at the boundary of each droplet, coating it so droplets can no longer merge. Common kitchen emulsifiers include:

  • Egg yolk (rich in lecithin) — the backbone of mayonnaise and hollandaise.
  • Mustard — both an emulsifier and a flavor in vinaigrette.
  • Dairy proteins in cream and butter.
  • Starch and gelatin, which stabilize by thickening the water phase.

The more of the surface you can coat, and the smaller the droplets, the more stable and creamy the sauce.

Why sauces break

A "broken" emulsion is one where the droplets have recombined and the fat has pooled out. It happens for predictable reasons:

  • Adding fat too fast. If you pour oil into a forming mayonnaise faster than the emulsifier can coat it, the droplets are too big and merge. Add fat slowly at first, a drizzle at a time.
  • Too much fat for the emulsifier. Each yolk can only stabilize so much oil. Exceed its capacity and the structure collapses.
  • Temperature shock. Butter-based emulsions like hollandaise and beurre blanc break when overheated (the proteins curdle) or when the butter is added too cold or too fast.
  • Not enough water phase. Emulsions need a continuous water base. If it dries up or is too small, there is nowhere for the droplets to suspend.

How to fix a broken sauce

The good news: most broken emulsions are recoverable. Start with a fresh small amount of the water phase (a teaspoon of water, or a new egg yolk, or a spoon of mustard) in a clean bowl, then slowly whisk the broken sauce into it a little at a time. You are rebuilding the emulsion around a fresh, well-coated base. Warm broken butter sauces can often be rescued by whisking in a splash of cold water off the heat.

Building a stable emulsion from the start

  1. Have ingredients at the right temperature — usually room temperature for mayonnaise, gentle warmth for hollandaise.
  2. Start slow. Add fat drop by drop until the emulsion visibly forms and thickens, then speed up.
  3. Keep whisking vigorously to keep droplets small.
  4. Include enough emulsifier and enough water phase for the amount of fat you plan to add.

Frequently asked questions

Why did my vinaigrette separate in the fridge? Simple oil-and-vinegar dressings are only temporarily emulsified. Add a little mustard or a touch of honey as an emulsifier, or just shake it again before serving.

Can I fix mayonnaise that won't thicken? Yes. Start a fresh yolk in a clean bowl and whisk the runny mixture into it slowly. It almost always comes together.

Why does hollandaise break so easily? It is an emulsion held together by egg proteins that also curdle with heat. Keep it gently warm, never hot, and add the butter gradually.
